Immune boosting medicinal honey

I have started a little side obsession. It’s infusing honey. I love to experiment with honey to create a super power punch medicinal infusion. Once I am half way through a medicinal honey jar, I start a new one! I have about 4 always in my fridge, of different flavors & tastes.

This is like a great all year infusion, to keep your immune system up. Just a scoop will have so many benefits to help battle a cold before it starts. Great for sore throats & coughs.

The benefits

Just the local honey itself will have antibacterial, anti-fungal, & antioxidants properties. It will be packed full of Vitamin C from the lemon & white pine. Onions have antioxidants & are an anti-inflammatory. Garlic will boost your immune system & has a keeping your heart healthy bonus.

Recipe

Immune boosting medicinal honey
1 cup local honey, divided
Couple slices of red onion
1 clove garlic, smashed with a back of a knife
Couple slices of lemon
2 tsp dried thyme
1 tbsp white pine (optional)

In a 250 ml jar, pour a little honey at the bottom the start layering your ingredients with a little honey in-between. Like a vertical lasagna, but leaving a lemon or a lemon slice at the top, to keep everything down. Leave on the counter or a window sill for 5-10 days. Then keep in the fridge. You can either strain it, or use as is.

If you work around all of the ‘food slices’, you could put it in a chicken recipe, or ham even. Or use the jar as is & pour boiling water over the jar, put a lid on it, and let it infuse! Zero waste tea! (It is my preferred choice of the leftovers.)

Consume by the tablespoon direct into your mouth, or with some hot water to have a tea. Alternatively into your main meals at home. As I said, it is a great base & an all around infused honey.
